My husband kept hinting he’d like a date cake. I said ‘what about date and walnut’ so that was the starting point. We don’t eat a lot of cake, but it was worth trying out. I bought some chopped dates and some walnut pieces in the supermarket and looked for a recipe online. I came across nigella.com and found a ‘community’, i.e. submitted to the site by others. It looked OK.
I had 200g of walnuts so chucked the lot in, and I found that the mixture got a bit stiff before I had added all of the flour, and accidentally left some of it out. I wondered if I should have added a bit more liquid. It cooked nicely, didn’t rise a huge amount (probably because of the lack of flour!). I covered it in some coffee-flavoured glace icing and it was quite yummy, if a little on the dry side.
So, I think I will adapt this recipe next time I use it.
