I blame Sainsbury’s. They stick up these mouthwatering recipe cards and you just get tempted into trying something different. Having seen an episode of The Great British Bake Off and the contestants’ efforts with Filo pastry, I couldn’t pass up an opportunity to do something with Filo. A Fig, thyme and goats’ cheese tart. Well, it started with seeing some lovely figs in M&S. Then an expedition to Sainsbury’s for the other ingredients. I am not confident enough to try and make my own filo pastry. Judging by the Bake Off show, the kitchen would need a complete redecoration if I tried it myself. So I bought some fresh filo sheets from the chilled section. Brushed four sheets individually with olive oil and lined a 18cm loose bottomed cake tin, as per the instructions. So far so good. Then mixed up some creme fraiche, semi-skimmed milk, some grated Italian hard cheese, added some fresh thyme, seasoning and some Abergavenny goats’ cheese. Poured it in the tin, floated the halved figs on top and stuck in the oven for 45 minutes.
Just about to eat it for lunch. Was delicious warm with a green salad and some crispy crinkle oven chips. Well done, Sainbury’s, will do that one again!
